7 express lessons we learnt from Nigella

A little something extra from the domestic goddess herself!

1. Sweet potatoes are the perfect lazy roast veg

Shoving them into the pan underneath her chickens to roast, Nigella suggests that if you really wanted crispy sweet potatoes you should roast them in a separate pan. But since “sweet potatoes never go that crispy”, you might as well do them all in one, and save yourself the washing up!

2. Italians always put lemon on their steak

IS THIS A THING?? Apparently it’s *tenderising? But more importantly, it’s so that a thin steak (if that’s what you’re using) doesn’t dry out when it’s resting

3. The secret to a fuss-less chocolate mousse? Mini marshmallows!

I’m sure my French cooking teacher would just keel over from this tip, but it makes sense because marshmallows are made from mostly sugar and gelatine, the latter of which is often used to stabilise a mousse anyway!

4. Pasta water

We all know the virtues of pasta water in bringing together a pasta sauce on the stove, but did you know that it can also bring together a pasta sauce...in a salad bowl?! Nigella tosses hot linguini through with raw sliced mushrooms, crushed garlic, olive oil and thyme, and uses a splash of hot pasta water to make the “sauce”. Whuuuuttttt??!! Definitely using this tip in my next pasta meal.

5. There’s no shame in using lime juice from a bottle

And there’s no shame in...anything, really. Use whatever convenience products you like, and if it cuts your time cooking down to practically nothing, then there’s your justification right there.

6. Portion and freeze your leftover cookie dough

If you have any leftover, that is! Nigella uses an ice cream scoop to lay them out on a tray, then freezes them for baking later. Genius, or what?

7. Silk robes are a must

If sneaky snacking on cold lamb chops from the fridge in the middle of the night makes you feel like a gluttonous schlub, all you have to do is dress in a silk robe and have a face of makeup on and you’re now snacking, domestic-goddess style!
